I have been eating a lot of kale salads lately, and someone at work mentioned that she makes kale chips. Regular potato chips are very addictive, and wanted to give this a try to get rid of that "crunch" craving I know we all get, while eating healthy. Let's just say that I made a whole sheet full, and may have eaten them all, but I didn't feel guilty! Win.

I put together a copy-cat recipe of the delicious hot dogs at Diseny Worlds Magic Kingdom Casey's Corner a couple of months ago. Kristin at CouponingToDisney.com has been kind enough to share this recipe with her readers and I wanted to share it with those of you who missed it before. Be sure to check it out for a quick and yummy dinner! (Great for those of you running around, especially now that baseball season is starting!)
After reading about baking mats on a blog last week and amazing they are, I had to give them a try. Cutlery & More had their Nonstick Baking Mats marked down as the Deal of the Week, and I paid $30 (with the $5.95 shipping) for 4 of them! These retail for $14.99 on Amazon, so I got a great price! _The idea of these mat's are you use them on your cookie sheet for baking, so you don't have to spray it with non-stick, or line it with parchment paper. The mats them make your food pop off easily, and can be rinsed off and reused. I tested these out with dinner, a cheesy, sauce filled, pepperoni calzone. I don't remember where I saw this recipe, but its really easy to make. I used Pillsbury pizza dough, rolled it out and layerd my toppings of sauce, cheese and pepperoni down the middle. Then I folded in the sides in a criss-cross pattern, and baked at 425 for about 10 minutes.
As you can see, there was cheese and sauce all over the mat, but the calzone came right off with a spatula. I took the mat over to the sink and all the mess just washed right off, no scrubbing needed! I'm in LOVE with these things, and I'm sure they'll make cookies and everything so much easier! I saw this post on how to make a 2 ingredient fudge and I just had to give it a try. It really is as simple as it sounds, I used a bag of white chips and a tub of cream cheese frosting, and added some red sprinkles in for fun. After a quick mix in the microwave, I spread the mixture into a pan and waited. Once it was cooled, it came right out of the pan, and I sliced and plated it to take to work. When I checked in the break room before heading home from work, the plate was empty. So yes, it does taste delicious.
While I was at the Magic Kingdom last weekend, I was lured into Casey's Corner by the delicious smell of hot dogs. Before you think I'm crazy, these weren't just regular hot dogs - they have something called a barbeque slaw dog! I'd never even heard of this but boy was it delicious! Of course, as all things Disney, its a bit pricey, and will set you back $8.59. I'm no gourmet chef, but I was able to figure this one out.
I was able to pick up a pack of hoagie buns, hot dogs, a tub of pulled pork, and a container of coleslaw for $10.97 at the grocery store (probably could have gotten things a bit cheaper if using coupons and a sale! Or have even used pulled pork and coleslaw home-made). Divide that by six buns and I was able to make them for $1.83 each, with a couple hot dogs left over, and a couple scoops of the other ingredients left. As much as I love to indulge myself a little at Disney every now and then, this is much more cost effective to make at home! Just heat up the bun in the microwave or oven or not even at all, line it with warm pulled pork, lay in the hot dog, and put a couple of heaping spoonfuls of coleslaw on top. They are delicious, you have to give them a try! One of the best parts about fall is all of the pumpkin and apple recipes! I came across this simple way of making fresh apple chips.
It's as easy as you would expect; core and slice some apples, sprinkle with cinnamon, and bake at 175 for a couple hours until fully dried. Enjoy while hot, or seal in a bag and save for later. This week Publix had a great deal on strawberries. I ended up buying 5 containers, enough to fill 3 containers sliced, and a handful of the bigger ones I kept whole. After the sale price and competitor coupons, my total was $1.89. Now, what about those whole strawberries that I saved? I covered them in chocolate, and put green sprinkles on them! Perfect for the spring time. Happy Easter!
Everyone loves jello, right? I put together a layered jello dessert tonight that my mom makes. It's fairly easy to make, just a little time consuming, as you have to wait for each layer to set before adding the next, but boy is it delicious when its all done! A layer of basic jello mix. One down, 9 more to go! 2nd layer, this is a creamy mixture of sour cream, cool whip, and jello. 3rd layer, basic orange. 5th layer, basic raspberry. And a look at the final through the purple tinted pan. I'm convinced that my counters and refrigerator are not level, as each time i set the pan down it leans in a different direction! But it looks pretty all the same, try not to pay attention to how uneven and slanted the layers are. I would love to cut into it and show you, but what would they say if I showed up tomorrow with a giant piece missing! UPDATE: I took a picture of all the pretty colored layers! Layered Jello Dessert (I used a square pyrex pan; for a larger pan, you may need to use 2 small boxes or 1 larger box per set.) For each 4 1/2 serving box of jello, mix 1 package jello with 1 cup hot water. Split in 2 equal parts, about 3/4 cup in each. In 1st bowl, stir in a couple ice cubs, and then pour mix into pan. Refridgerate until set, about 20 minutes. In 2nd bowl, mix in 1 heaping tablespoon of sour cream, and 1 heaping tablespoon of cool whip. Stir in a couple of icecubs, and pour on the back of a spoon on top of the previous set layer. Repeat for desired number of layers. |
